After distillation, the grappa is diluted from 60% to 41% alcohol. Tradizione grappa has a crystal-clear color. Pommeau de Normandie, Comte Louis de Laurist, 0,70 l, France

Pommeau has been a well-kept secret of Normandy for a long time; official production was only given the green light in 1986. Fresh juice pressed from different varieties of apples from their own garden is blended with one-quarter of young Calvados with an alcohol content of 70%. The drink reaches 18% ABV, with 80 grams of residual sugar per liter. The blend is then placed in oak barrels. Barrels with three different degrees of roasting are used, which have previously been used to age Bordeaux red wines. By law, the time spent in oak barrels must last at least 14 months, but Lauriston's Pommeau is left to mature for at least three years. The alcohol content softens, with 1% even evaporating, and intertwines with the apple character into a unified whole. Pommeau is brownish amber in color with a slightly reddish mahogany undertone. The drink is clear and bright. First, aromas of baked apples, black plums, and dried fruits reach the nose. Traces of oak aging reveal almond, vanilla, cocoa, and caramel.
