Lanzhou Beef Noodle Soup

One of the oldest beef noodle soups is the Lanzhou hand-pulled noodle or Lanzhou beef lamian. It was originated by the Hui people of northwestern China during the Tang dynasty. Although there is some debate about the origin of Lanzhou hand-pulled noodles, the recipe is named after the main city of Gansu province, the city of Lanzhou, which stretches to the Yellow River and was a stop on the ancient Silk Road.
