WHITE WINES (CHILLED❄️) › JAPANESE WINES GRAPE VARIETY: KOSHU Production Koshu grapes are grown in the Fuefuki district, one of the 13 cities located in Yamanashi Prefecture. Harvest takes place from late September to early October. This wine spends 3 weeks on skins to achieve the vibrant apricot-skin hue. Fermentation in a stainless steel tank at 24 to 26 degrees for about 28 days, in an oak barrel at 20 to 22 degrees for about 14 days. The wine spends 8 months in oak barrels. Tasting notes Faint reddish orange hue. Sweet and gentle aromas of apricot, candied pear, Darjeeling and old Rose with subtle vanilla notes derived from 8 months in oak barrels. The complex palate from the skins and seeds of the Koshu grape come from gentle skin contact, this creates a three-dimensional feeling in the mouth. Joao Portugal Late Harvest
Portugal Vinification Upon arrival at the winery, the grapes are stored in a cold chamber starting to cool down until they reach negative temperatures, so that they almost freeze. Later the grapes are de-stemmed and crushed, originating a must with an enormous richness in sugars. Fermentation takes place in stainless steel tanks at controlled temperature. When the desired point between alcohol and residual sugar is reached, the fermentation is stopped using cold. Ageing In 300 litres French and Hungarian oak barrels for 24 months Alcohol 12 % vol. Acidity 8,5 g/l Sugars 125 g/l Tasting Notes Golden yellow color. Aroma of grapefruit peel, floral notes and honey. Good body and volume, revealing freshness and a long finish, due to the balance between sweetness and acidity.

Teliani Valley Glekhuri Kisi Qvevri [Amber Wine]
Georgia Production The wine is made from the traditional Kisi grape grown in the villages of Akhmeta district in south west Kakheti. 100% Kisi grapes are grown in clay and stone soils, whole bunches are fermented in underground qvevri for 6 months, lending the wine it’s amber colour, distinctive flavour and mildly tannic structure. 6500 bottles were produced. Tasting notes Kisi is a native Georgian grape with sweet spice notes and great acidity, perfect for maintaining freshness. Fermentation in Qvevri adds great complexity and texture. Don't chill it, you'll just bring the tannins forward at the expense of the lovely flavours - serve cool, not cold! Food match Works well with light poultry dishes, charcuterie and salads. Serve cool, not cold.
