PROCESS VARIETY ALTITUDE REGION Decaffeinated Wash Castillo, Caturra and Colombia 1400-2000 MASL Huila This coffee comes from ASOMUJER, an association made up of 75 women producers in southern Huila, Colombia, including single mothers, activists, and families displaced by the conflict in Colombia. Founded in 2007, the association aims to promote quality, sustainability, and recognition of women's work in the production of specialty coffees. The coffee is grown in the mountains of Huila, a unique region between the Central and Eastern Andes mountain ranges, whose climate and terroir yield high-quality beans. This batch is a blend of the Castillo, Caturra, and Colombia varieties, renowned for their balance, complexity, and flavor potential. The decaffeination process is carried out with ethyl acetate from sugarcane, a natural and delicate method that preserves the original characteristics of the coffee. The beans are steamed, immersed in an ethyl acetate solution, and then dried, ensuring the removal of caffeine without compromising the aroma and flavor. The coffee follows the traditional washed process: the ripe beans are pulped, fermented, and carefully washed before drying, ensuring purity, balanced sweetness, and a velvety body.

PROCESS VARIETY ALTITUDE REGION Carbonic S795, Kartika 1200 M Batukaang, Kintamani Maceration The Karana community represents a collective effort of 377 smallholder farmers in the Kintamani region of Bali, Indonesia. Rooted in traditional Balinese community culture and the practice of Hindu traditions, this group embodies a harmonious relationship between agriculture and local heritage. The farms, situated at an average altitude of 1,200 meters , occupy a total planted area of 477 hectares , where the S795 and Kartika coffee varieties are cultivated . Smallholder farmers in the region utilize diverse processing methods, including natural , washed , anaerobic , honey , and wet-hulled , demonstrating a strong commitment to innovation and quality. These diverse processing techniques result in unique flavor profiles that reflect the distinct terroir of the Kintamani region. In addition to coffee, farmers also cultivate oranges, vegetables, and other crops , reinforcing the biodiversity and sustainability of their agricultural practices. Sustainability is at the heart of Karana's agricultural approach. Farmers utilize composting, avoid the use of chemicals, and plant suitable shade trees, promoting ecological balance. A new cooperative drying center , funded by private donations, will further support producers by providing accessible and efficient processing infrastructure during and after harvest. The Karana community's vision is to establish itself as a trusted supplier of green coffee to both national and international markets. By integrating cultural traditions, sustainable practices, and community-driven innovation, the Karana group's estate offers a vibrant representation of the Kintamani region's coffee heritage. Process: Generally, freshly picked, whole cherries are placed in a hermetically sealed container where oxygen is replaced by carbon dioxide (CO₂). This anaerobic environment induces a specific type of fermentation that initially occurs within the fruit itself, known as intracellular fermentation. Coffees subjected to carbonic maceration often present a striking sensory impact, with intense aromas, more expressive fruity notes, vibrant acidity, and greater complexity. This method imparts a distinct flavor profile, carefully shaped by controlling the time, pressure, and presence of CO₂ during the process.

The name is inspired by the Lion of Saint Mark, a symbol of the evangelist and a prominent presence in the region, associated with the spiritual strength, elevation, and cultural identity of the local people. Interestingly, despite its strong symbolism, this coffee reveals itself in the cup in a delicate, floral, and subtle way. It is this combination of smoothness and elegance that led the community to describe this batch as the female lioness: expressive, balanced, and full of character. The San Marcos region is surrounded by two of Guatemala's highest volcanoes, Tajumulco and Tacaná, whose influence is reflected in fertile volcanic soils, ideal for producing high-quality coffee. The different altitudes and microclimates give the coffees from this origin a distinct sensory profile, marked by clean acidity and elegant aromas. Origin and producers La Leona is a community blend, produced by small farmers in San Marcos, deeply committed to quality. Over the years, these producers have invested in improving their infrastructure and practices, from the field to processing, with the aim of continuously raising the level of their coffees. Although informal groups exist in the region, many producers prefer to work independently, delivering their coffee individually to ensure complete control over the process. During the harvest, which takes place between the end of December and March in the higher altitude areas, different fermentation methods are used—dry, submerged, or in plastic or concrete containers—adapted to the specific conditions of each producer. In addition to coffee, many farmers grow bananas and avocados, intended for their own consumption and as a supplementary income, reinforcing the sustainability of their farms. Profile in the cup In the cup, La Leona presents an elegant and balanced profile , with notes of green apple, honey and dried fruit , a smooth body and a clean, pleasant sensation from start to finish.
